Waipara Springs
Waipara Springs is a small family owned vineyard and winery located in the heart of the Waipara Valley 50 minutes north of Christchurch city.
Jointly owned by the Moore and Grant families, Jill Moore manages the wine bar and cellar door sales, Bruce Moore the vineyard and son Andrew is the General Manager.
The original planting of Chardonnay vines in 1982 by Bruce Moore, a pioneer of Waipara viticulture has been expanded to 25 hectares (64 acres) of Sauvignon Blanc, Riesling, Gewurztraminer, Chardonnay and Pinot Noir.
The Waipara Springs Winery and Restaurant are house in attractive old farm buildings built as a stables and grain shed before the First World War by local horse trainer Tommy Walker. The Winery itself was converted from the old wool shed in 1990 and has been further expanded with the addition of the Balmoral fire station building in 1992 and again with the old Cheviot fire station that was moved to the site in 1996.

Waipara Springs was established by the Moore and Grant families. Bruce and Jill Moore have lived on the property for many years and together planted the first grape vines at Waipara Springs. Andrew Moore is the operations manager and has an active involvement in all aspects of the company. Responsible for winemaking is Frank Manifold who has had many vintages both overseas and locally.
The Waipara Springs Estate Vineyard from which the Waipara Springs and Premo wines are solely sourced has a terroir that renders wines totally unique. Derived from a prehistoric lakebed at the centre of the Waipara Valley floor the vineyard soils are a rich blend of
clay and limestone.With vines sheltered from the prevailing easterly winds by the Teviotdale range, high midsummer heat combined with relatively low rainfall during the growing season along with long warm days and cold nights during harvest provide near perfect
conditions for high quality fruit. After evaluation of each block, labour intensive canopy manipulation is carried in accordance to the style of wine each parcel contributes to the overall blend.
Covering an area of 26 hectares, the Waipara Springs vineyard contains some of the oldest Mendoza clone Chardonnay in New Zealand, a mixture of Pinot noir clones, Riesling, Gewürztraminer and Sauvignon Blanc. We put a strong emphasis on careful vineyard management with a
