Tasting Note:

This bright purple red wine show a lot of spice and fruit on the nose, the palate is soft, yet concentrated with fruit and a lingering aftertaste.

What to eat with:

Slow roasted lamb cutlets, roasted beef, oxtail potjie or just on its own.

The grapes were given a cold soaking for two days to ensure gentle extraction of fruit and tannins. Once fermentation commenced the must was gently pumped over twice or three times a day to keep the fermentation cake moist. After alcoholic fermentation the wine was racked to tank, 3rd and 4th fill barrels for partial malo-lactic fermentation in barrel. The wine was racked every 6 months during its maturation, after 12 months in barrel the wine was racked and blended. After blending the wine did not receive any fining and was only given a course filtration before bottling.
