2009 Symbols Sauvignon Blanc/Semillon
Tasting Note:
Appearance - Pale green. Nose - Fresh passionfruit, kiwi fruit and lime with hints of grassiness. Palate - Tangy lime, passionfruit and gooseberry on the palate from the Sauvignon Blanc, with gentle red apple and lemon sherbet from Semillon, with clean crisp acidity and a textural finish.Independents Note:

A very cool start to the season, specifically in November and December, was followed by a long, warm Indian summer
providing close to ideal ripening conditions for all varieties.
The Semillon and Sauvignon Blanc benefited from the cooler
summer months, sufficiently protected from the sun to retain freshness and acidity. The grapes were harvested early in the morning and crushed ever so gently to the press. Juice was then patiently drained and settled prior to controlled fermentation.
The wine is bottled young to maintain freshness and natural acidity.
