2008 Symbols Cabernet Sauvignon/Merlot
Tasting Note:
Appearance - Crimson with purple hints. Nose - Aromatic mulberry, black plum and blackberry, with lingering perfumed varietal aromas. Palate - Mouth coating and plump flavours of dark plum fruits and black berries, supple and flavoursome, thick and textural with a long pleasing French oak tannin finish.Independents Note:

From a vintage that can only bedescribed as a typical Frankland River weather pattern. 2008 produced red fruit packed full of flavour and intensity. The vintage was warm and dry resulting in pristine fruit condition and low yields. The fruit was crushed tostatic fermenters and some batches were allowed a cold soaking prior to ferment. Fermentation then proceeded at moderate temperatures for 8 days prior to pressing and draining to 1 yearold French oak.

The Ferngrove Cabernet Merlot is juicy and fleshy with varietal characters distinctive of the region, and this vintage epitomises the Ferngrove style.
