A very cool start to the season, specifically in November and December, was followed by a long, warm Indian summer providing close to ideal ripening conditions for all varieties. The Sauvignon Blanc was allowed to ripen slowly and evenly on the vine and harvested with ripe passionfruit flavour and zippy acidity. The grapes were harvested in the early morning and crushed ever so gently to the press. Juice was then patiently drained and settled prior to controlled fermentation. Lees stirring following fermentation assists with texture and mouthfeel.
