Darling Cellars' Gustus wines (Latin for 'taste') come from specific vineyards which are selected for their uniqueness in prominent terroir flavours.

A bouquet of dark plums, currants, dark berries, forest floor and kelp with underlying toasted oak notes. These concentrated flavours follow on the palate and, combined with a fine tannin structure, give the wine a rich, complex finish.

Vinification details

Grapes were hand selected from 36-year-old unirrigated bush vines. Following a five day cold soak, fermentation took place in open tanks with a combination of pump overs and punch downs. Alcoholic fermentation was completed on the skins with extended skin contact for another ten days. The wine was aged in French oak barrels for 22 months.

Vinification details

From 36-year-old bush vines grown without irrigation. On arrival at the winery the grapes were crushed and destalked, before 14 days’ fermentation at 23-25°C. Aged in French oak barrels for 15 months.
