Vinification details

The Doctors’ Pinot Noir is produced from the estate’s north and middle Wairau Valley vineyards, planted over 20 years ago. These special sites have soils composed of alluvial river terrace, crushed stones and clay. Forrest Wines have perfected the technique of slowing the vines’ ability to make sugar, without affecting the flavour, creating naturally lower alcohol wines.
