Tasting note

Deep in colour, purple, with red hues. Classic cool climate shiraz, with layers of brambly dark fruits intertwined with kitchen spices of vanilla, clove, anise and pepper. A concentrated and powerful example of Adelaide Hills Shiraz that is superbly focussed with long, classy tannins.

Vintage conditions

A very dry Spring and warm Summer led to our earliest start to vintage on record. Yields were slightly above average for shiraz in the region. Cool to mild February and March nights led to optimal flavour development.

Vinification details

The vineyard parcels are kept separate from picking to final blending. All fermenters were gently macerated each day during the 8-12 day of fermentation using a mix of plunging, gravity delestage and pump overs. Following ferment, fruit was air bag pressed to the finest French oak barrels for maturation, comprising of 50% new French oak 225L barriques. Great care is used when selecting oak for wine of this quality and concentration. Only the finest grained oak is used to enhance the wine, giving weight, drive, mouthfeel and complexity. The 2016 Nest Egg Shiraz is a careful blend of 12 exceptional barrels from the best vineyards produced from the outstanding 2016 season. After 22 months in oak, during which time the vineyard parcels remain completely separate, the  blend was made using an inert and pump free system, prior to preparing for bottling shortly after.

Tasting note

This outstanding limited release wine is deep coloured, dark red with a bright ruby hue. Powerful yet distinctly cool climate. On the nose, flavours of brambly black fruit are apparent, supported by cracked pepper, nuanced floral violets and black olive. Structured in its youth, with rich and brooding shiraz fruit, the wine will develop and evolve beautifully over time

Top shiraz parcels were processed gently from start to finish. Fruit is partially destemmed, with up to 50% whole berries then transferred to small, open top fermenters. Parcels spend around 7-12 days on skins, with twice-daily analysis from the winemakers to ensure optimum colour and flavour. The premium oak barrels chosen for maturation were selected specifically to maximise the flavour profile of the shiraz. The wine spent 22 months ageing in barrels that are 65% new oak.

Very hot summer conditions were followed by a mild autumn. The cooler ripening conditions favoured more medium-bodied, structural and aromatic red wines. Yields on Shiraz were low across the board.

Tasting note

A vibrant, dark red with a deep purple rim and varietal aromas of spice, plum, blackberry and white pepper. The palate is an intense expression of the aromas with hints of liquorice and chocolate, further enhanced by fine, spicy tannins typical of cool climate Shiraz.

Vinification details

Each vineyard and clone were crushed separately into small open fermenters, which were pumped over twice daily for a minimum of seven days to maximise colour, flavour and tannin extraction. The wine was then graded by the winemakers post press – those that achieved Nest Egg status were racked to the finest French oak barrels (40% new, 20% second fill and 40% 2+-year-old) for a minimum of 18 months’ maturation before blending.
