Vinification information
Sparkling Euphoria is made using the Charmat method and the production steps are as follows:
The grapes are received, crushed and de-stemmed, pressed and cold settled followed by fermentation. The juice is racked off fermentation lees and sulphur dioxide added before racking off the fine lees. There follows fining, filtration, alcohol reduction (if required), secondary fermentation in tank, SO2 addition when fermentation is finished, sugar adjustment, centrifugation and filtration, before final fining and bottling.

Vintage conditions
This was a challenging year in many ways, with lower yields than previous vintages and thanks to the Marquis Watering Program™, Mollydooker achieved outstanding fruit quality with exceptional flavour concentrations across the entire range. McLaren Vale had dry weather conditions throughout spring/summer 19/20 and low rainfall. The Langhorne Creek vineyards (60km west of McLaren Vale) on the other hand encountered significant frost early in spring along with hot and windy weather during flowering, conditions which reduced overall yields for both regions. A favourable ripening period for harvest was the silver lining to low yields, resulting in high quality, full-bodied and vibrant wines that reflect the characteristics of the 2020 vintage.
