Shiraz, Guardian Peak

A Shiraz from vineyards ranging from Mediterranean climates in Stellenbosch to more arid coastal regions, each giving different characteristics to the wine.

Expressive dark fruits on the nose - blackberry, black cherry and mocha with sweet baking spices. The juicy fruit follows on the palate with sweet black fruit and bright cherry flavours supported by fresh acidity and notes of cinnamon, nutmeg and cloves. Well integrated oak and smooth tannins make this medium-bodied Shiraz utterly drinkable.

Vinification details

This Shiraz was vinified in a combination of open and closed top stainless-steel fermenters to preserve the fresh fruit flavours. After fermentation the wine was transferred to seasoned French oak barrels for 6 months’ further maturation.

Juicy cherry and ripe fruit flavours of blackberry. The palate is well supported by sweet baking spices and mocha notes, while the soft tannins create a well-balanced, approachable Shiraz with a juicy finish.

Deep ruby red; smoky mulberry notes with hints of pomegranate, followed by beautiful aromas of cherries and roasted almonds. The dark fruit rose petal and Turkish delight flavours on the palate balance harmoniously with the gentle tannin structure to create a well-rounded and accessible finish.

Vinification details

The wine was fermented at 28°C in a combination of open (punch down) and closed fermenters (pump over) for 7 to 14 days. Punch downs and pump overs occurred five times a day. Maturation took place in second- and third-fill 300 litre French and American oak for 10 months.

Ruby red. Beautiful mulberry notes are well supported by blackcurrants and hints of mocha, which follow through onto the palate. Guardian Peak's Shiraz has a well-rounded mouthfeel, elegant velvet tannins and a long, fresh fruit-filled finish.
